1 1/2 cups grated cheddar cheese

3 egg whites beaten until stiff

oil for frying

Mix the cheese with the salt, hot sauce, mustard, and flour
Add the beaten egg whites and mix carefully
Scoop 1 tablespoon of the mixture into the cake flour
Wrap each ball in cake flour
Let it rest for 5 minutes
Heat a generous amount of oil
Fry several balls at a time until golden brown
DRAIN on paper towels
The cheese balls are delicious hot or cold, and yield about 15.
