Milk for frying
2 cups of rapid mix
1/4 cup of confectioner's sugar
1/4 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1 tablespoon of vanilla extract
1 well-beaten egg
1/4 cup of milk or water
For the vanilla glaze:
1 1/4 cups of confectioner's sugar
2 tablespoons of milk
1/2 teaspoon of vanilla extract

Heat the frying oil in a deep skillet
In a medium bowl, combine the rapid mix, confectioner's sugar, cinnamon, and nutmeg
Mix well and reserve
In another small bowl, whisk together the vanilla extract, egg, milk or water
Add to the dry ingredients and mix until just combined
Fry the batter by spoonfuls in hot oil for 1 minute on each side, until golden brown
Drain on paper towels
While still slightly warm, prepare the glaze: combine all ingredients until smooth
Dip the fritters in the glaze
Yield: 14 to 16 fritters.
