Melt 100g of bitter chocolate with 70% cocoa and 100g of unsalted butter in a double boiler over low heat
Let the mixture cool slightly, then whisk until smooth
Use an electric mixer to beat 4 eggs and 200g of sugar until stiff peaks form
Gently add 50g of flour, 1/4 teaspoon baking soda, and a pinch of salt
Add the chocolate and divide the dough into 8 small balls
Bake at 350°F (180°C) for 25 minutes or until firm to the touch
Prepare the covering: melt 150g of bitter chocolate with 70% cocoa and 45g of unsalted butter in a double boiler over low heat, then whisk until smooth
Divide the covering among the truffles
Dress with small pieces of caramelized chocolate
