PANCAKE MIXTURE

Grease three 9-inch round cake pans and dust with flour. Reserve
Bake the oven to 350°F (180°C)
PREPARE THE CAKE: In a stand mixer, beat the butter until creamy
Add the eggs one at a time, beating well after each addition. Reserve
In a small bowl, whisk together the flour and baking powder. Reserve
Alternating with the dry ingredients, add the milk to the butter mixture, mixing until smooth
Mix in the mashed bananas and mix until combined
Distribute the batter evenly among the prepared pans
Bake one pan at a time for about 25-30 minutes or until golden brown
Let cool completely before serving
PREPARE THE FILLING: In a medium bowl, combine all filling ingredients and mix until smooth. Reserve
Assemble the cake by spreading half of the filling on the first layer, followed by the second layer, and then the third layer
Dust with confectioner's sugar and sprinkle with cinnamon
Serves 6-8 with approximately 550 calories per serving.
