Beat the butter and sugar until creamy
Add the egg yolks one by one, beating continuously to form a smooth mixture
Gradually add the sweet potato flakes mixed with yeast and salt
Beat well
Beat the egg whites until stiff and fold into the mixture
Mix carefully
Pour the batter into an 8-inch greased cake pan
Bake in a moderate oven (180°C) for 40 minutes or until a toothpick inserted in the center comes out clean
Let it cool slightly before removing from the mold
