Beat the butter and sugar thoroughly
Add each egg one at a time, beating continuously until a creamy mixture forms
Gradually add the sweet potato puree mixed with yeast and salt
Mix well
Beat the egg whites until fluffy and fold them into the batter
Mix carefully
Pour the batter into a greased 12-inch round cake pan
Bake in a moderate oven (350°F) preheated for about 40 minutes or until a toothpick inserted into the center comes out clean
Let it cool and cut into 16 slices.
