In a saucepan, mix the sugar and water, then bring to a boil, stirring only until dissolved
Remove from heat and let cool slightly
Add the eggs beaten lightly, cheese, coconut, margarine, and finally, flour
Mix very well and place in muffin tin cups greased with butter
Bake in preheated oven at 400°F (200°C) for about 90 minutes or until the surface is golden brown and a toothpick inserted into the center comes out clean
Let cool completely before removing from molds, carefully passing a knife around each one
Place on paper-lined plates
You'll have 20 pieces
Note: To achieve a firmer consistency, add 1 tablespoon of cornstarch along with the flour.
