Blend the beetroot with the water in a blender and strain it through a fine-mesh sieve
Set aside
Beat the butter with the egg yolks and sugar until smooth
Add the sifted flour, alternating with beetroot juice, and mix delicately with a wooden spoon
Set aside
Beat the egg whites until stiff and add the baking powder
Fold in the mixture carefully with a spatula
Mix until homogeneous and pour into a greased and floured cake pan
Bake in a medium oven, or until clean when tested with a toothpick
