3/4 cup unsalted butter
1/4 cup confectioners' sugar sifted and well-packed in a bowl
6 slices of fresh pineapple, 1 cm thick
Some strawberries (for decoration)
2 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
A pinch of salt
2 eggs
1 teaspoon vanilla extract
1 1/3 cups milk

Place 4 tablespoons of butter in a refractory bowl of 25 cm diameter
Microwave on high for 1 minute, until melted
Spread the confectioners' sugar over the melted butter
Arrange the pineapple slices and strawberries on top, placing one strawberry in the center of each slice
Microwave on high for an additional 3 minutes. Reserve
Mix together the flour, granulated sugar, baking powder, and salt
Add the remaining butter, eggs, vanilla extract, and milk, mixing until smooth
Pour the mixture over the fruit
Microwave on medium heat for 5 minutes
Increase to high heat and bake for 2-6 minutes or until the cake is done, then remove from oven and let cool
Let it rest for 5 minutes before serving warm
Serve at room temperature
Note: If desired, serve with freshly whipped heavy cream.
