Grind the tuna in a food processor
Mix well, then add the flour, cheese, and eggs
Mix until well combined
When well mixed, shape into a large croquette
Wrap in a damp white cloth twisted twice
Tie the two ends of the cloth together
Place in a large enough casserole to allow the cake to relax without breaking
Cover with water and let cook for 1 hour
Remove, let cool, then refrigerate
Serve cold
Top with mayonnaise.
