1/4 cup of unsalted butter or margarine, softened
2 cups all-purpose flour
3/4 cup of granulated sugar
1 teaspoon active dry yeast
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 1/4 cups ripe banana, mashed
4 tablespoons plain yogurt
1 cup caramelized fruits, chopped
1 cup shredded coconut

Melt the butter or margarine and let it cool slightly
In a large mixing bowl, whisk together flour, sugar, yeast, baking soda, and salt
Set aside
Beat the eggs until very smooth
Mix with mashed banana, cooled melted butter or margarine, and yogurt until well combined
Beat until smooth
Make a depression in the center of the dry ingredients
Pour in the banana mixture along with the caramelized fruits and coconut
Mix just until the dry ingredients are moistened
Grease and flour a 9-inch round cake pan
Pour in the batter and bake at 325°F for 40-45 minutes, or until a toothpick inserted into the center comes out clean
Let cool and then flip onto a wire rack.
