2 large ripe bananas, sliced
2 tablespoons of yogurt
2 large eggs
2 tablespoons of grated lime zest
1 and 1/2 teaspoons of vanilla extract
2 cups of all-purpose flour
3/4 cup of sugar
1 teaspoon of baking powder
1 teaspoon of active dry yeast
1/2 teaspoon of salt
3/4 cup of unsalted butter

Combine bananas and yogurt in a processor or blender until smooth
Add eggs, lime zest, vanilla extract, and process until well combined
In a separate bowl, mix together dry ingredients and add melted butter
Add half of the banana mixture and mix until just combined
Beat on low speed for 2 minutes to moisten dry ingredients
Increase speed and beat for an additional minute and a half
Scrape down sides of bowl as needed and repeat adding banana mixture in two parts, beating 20 seconds after each addition
Pour into a greased and floured 9-inch springform pan
Bake at medium heat (350°F) for 30-40 minutes or until a toothpick inserted comes out clean
Remove from oven and let cool on wire rack
Once cooled, loosen edges with a spatula and remove from pan
Slice into 12 pieces.
