1 medium onion, chopped
2 tablespoons of butter or margarine
1 kg of cooked and mashed sweet potatoes
3 tablespoons of all-purpose flour
4 separated eggs
1/2 cup of grated Parmesan cheese

Sauté the onion in butter until golden brown
Add the sweet potatoes and mix well
Remove from heat and add the flour
Mix thoroughly
Let cool
Add the egg yolks and grated cheese
Beat the egg whites until fluffy and fold into the sweet potato mixture, mixing carefully
Pour into a 25cm diameter pan with a hole in the center
Bake at moderate heat (180°C) for about 55 minutes or until golden brown
Remove from mold and serve
Serves 4 people.
