Open up the beef to form a large steak
Season with salt and black pepper to taste
Prepare the filling: beat the eggs lightly and season with oregano, sausage, salt, and black pepper to taste
In a skillet, heat the butter or margarine
Add the eggs and let it cook until almost set on top
Place this frittata over the beef and roll it up like a roulade
Tie the beef to keep its shape
Place it in a baking dish and brush with olive oil all over
Put it in a moderate oven preheated (180°C) and bake, turning occasionally, until browned (about 1 hour)
Remove the beef from the baking dish and reserve
Add 1 cup of water to the baking dish and scrape well with a wooden spoon
Pour everything into a pot
Bring to a boil and serve with the beef
