Place the honey in a small saucepan and heat over low heat until it starts to simmer
Remove from heat and let cool
In a stand mixer, beat the egg yolks with the flour until smooth and creamy
Add the cooled honey slowly and beat again
Add the sifted all-purpose flour and mix slowly
Add the lemon zest and ginger and mix well with a wooden spoon until the batter is even
Set aside
Beat the egg whites in a separate bowl, making sure not to let them dry out, and fold into the cake batter gently with low-to-high strokes
Pour into a greased and floured baking dish and bake in a medium preheated oven
Bake until, when inserting a toothpick, it comes out clean.
