For the dough
7 1/2 cups of wheat flour
5 spoons (tablespoons) of active dry yeast
2 1/2 cups of butter or margarine
5 cups of granulated sugar
10 eggs plus 5 yolks
2 1/2 spoons of orange extract (found in citrus-flavored bottled water)

2 spoons of almond extract (or vanilla extract)
1 kg of confectioner's sugar
10 to 12 spoons of heavy cream or 2 eggs
2 cups of finely chopped almonds

Prepare the dough: combine wheat flour and active dry yeast
Bate the butter or margarine with granulated sugar
Add 15 egg yolks, one at a time, beating well after each addition
Add orange extract and grated orange peel
Alternate adding dry ingredients with milk, slowly beating until smooth
Beat 10 egg whites until stiff peaks form and fold into the dough
Grease the bottoms and sides of four round cake pans (30 cm in diameter, two; 25 cm, two; and one 20 cm)
Bake two cake pans in a moderate oven until a toothpick inserted in the center comes out clean
Let the remaining two cake pans sit at room temperature until baking time
Cool each cake layer completely before filling
For the filling: beat butter until light and fluffy
Add almond extract (or vanilla extract) and half of confectioner's sugar, beating well
Add part of heavy cream or 1 egg (beaten), mixing well
Gradually add remaining heavy cream or 1 egg (beaten) to achieve a good consistency
Add chopped almonds and the remaining 5 spoons of heavy cream
Cover each cake layer with Royal icing and decorate with sacs, flowers, and festive decorations
