For the dough: Separate 12 eggs and set aside. Mix in 2 3/4 cups of ground hazelnuts, 5 tablespoons of all-purpose flour, and 600 grams of hazelnuts, chopped finely. Add a little bit of melted butter to grease the pan and some all-purpose flour for dusting. Reserve some chopped hazelnuts for garnishing.
For the angel hair: Whip 12 egg whites until stiff peaks form. Mix in 1/2 cup of sugar, 1 cup of water, and 1/4 cup of rum extract. Set aside.
Covering: Whisk together 6 egg whites and 3 tablespoons of sugar until stiff peaks form. Add to the warm milk mixture and whisk until smooth. Dust with ground hazelnuts and garnish with chopped hazelnuts if desired.

Add the eggs, one at a time, beating well after each addition
Fold in the chopped hazelnuts, mixing gently
Grease two 30cm round cake pans with butter and line with parchment paper
Dust with all-purpose flour and divide the dough evenly between the prepared pans
Bake in a preheated oven at 180°C for about 40 minutes or until the cakes start to come away from the sides of the pan
Prepare the angel hair: Whip the egg whites until stiff peaks form
Fold in the sugar, mixing well
Add the water and rum extract, whisking until smooth
Grease a round cake pan with butter and pour in the mixture
Bake in a preheated oven at 180°C for about 20-25 minutes or until the angel hair is cooked through
Let cool completely before assembling the cakes
To assemble: Place one of the cooled cakes on a serving plate
Top with the prepared angel hair, spreading evenly
Place the second cake on top and dust with ground hazelnuts.
