3 egg yolks
3/4 cup (chopped) of butter
1 1/2 cups (chopped) of sweet potatoes
6 tablespoons of cake flour
300g of toasted and ground almonds
1 tablespoon of vanilla extract
1/2 cup (chopped) of milk
3 egg whites
1 tablespoon of active dry yeast

Preheat the oven to a high temperature
In a stand mixer, beat the egg yolks, butter, and sweet potatoes until well combined
Add the cake flour, almonds, and vanilla extract in alternating with milk
Beat until smooth
Beat the egg whites until stiff peaks form and fold them into the mixture
Add the yeast and mix well
Pour the batter onto a greased round cake pan and bake.
