For the dough
1 1/4 cup all-purpose flour (150 g)
3/4 cup unsweetened cocoa powder (60 g)
1/2 teaspoon active dry yeast
5 large eggs, separated
1 cup granulated sugar (180 g)
1 cup hot milk (240 ml)

1 can sweetened condensed milk (395 g)

Preheat the oven to 200°C (hot)
Butter two 24cm diameter round cake pans and set aside
Prepare the dough: in a medium bowl, combine the flour, cocoa powder, and yeast
Set aside
In a stand mixer, beat the egg whites until stiff peaks form
Without stopping the machine, add the egg yolks one at a time and the granulated sugar
Beat well
Alternately add the flour mixture and hot milk, beating well with a wooden spoon
Distribute the dough between the prepared pans
Bake in the preheated oven until a toothpick inserted into the center comes out clean (about 20 to 30 minutes)
Let cool slightly and remove from pans
Prepare the filling: in a medium saucepan, combine all ingredients over low heat, stirring until slightly thickened (about 10 minutes)
Let cool
Place one of the cakes on a serving plate, spread with the filling, and top with the other cake
Prepare the topping: in a medium saucepan, combine all ingredients except shredded coconut over low heat, stirring until smooth and runny
Pour still warm over the cake and spread evenly with a spatula
If desired, decorate with shredded coconut
Serve at room temperature
