1/2 liter of chocolate sorbet

1/2 liter of strawberry sorbet
3/4 cup heavy cream
1/4 cup candied cherries, chopped
2 tablespoons orange and lemon zest, chopped
3 tablespoons unsweetened dark chocolate, chopped
2 tablespoons orange liqueur
1/2 liter of chocolate sorbet
1/2 liter of vanilla sorbet
1/2 liter of strawberry sorbet
3/4 cup heavy cream
1/4 cup candied cherries, chopped

Mildly moisten a 21 cm round aluminum mold with water and place it in the freezer until frozen
Retrieve the chocolate sorbet from the freezer about 15 minutes before preparing to allow it to slightly soften
Spread it evenly in the chilled mold, at the bottom and sides, and return it to the freezer until firm
Repeat this process, first with vanilla sorbet and then strawberry, leaving a cavity in the center
Whip the heavy cream into a meringue, add the remaining ingredients, mixing carefully, and fill the cavity
Return it to the freezer until firm at serving time
Unmold quickly by running the mold under hot water, and garnish as desired
