In a saucepan, dissolve the gelatin in the hot coffee
Add the milk and heavy cream
Heat over low heat, stirring constantly until warm. Reserve
Beat the egg yolks until thickened and gradually add 3/4 cup of sugar
Slowly pour this mixture into the reserved cream while still warm
Cook over low heat, stirring constantly, until slightly thickened and cover a spoon with it
Remove from heat and let cool in the refrigerator until firm
Beat the egg whites until fluffy and gradually add the remaining sugar, beating well
Carefully combine with the reserved coffee mixture
Pour into a decorative mold with a capacity of 2 liters
Refrigerate until firm
Remove from mold and garnish with chocolate shavings.
