Hydrate the gelatin in cold water. Reserve

Place a small saucepan over medium heat and combine the orange and lime zest, sugar, and 150 ml of water
Bring to a boil, then reduce heat and let simmer for a few minutes
Remove from heat and add the reserved gelatin

Add the lime juice and 100 ml of cold water
Pour into a mold with a capacity of 250 ml and refrigerate until set

Peel the oranges, remove the seeds and white parts, and cut into cubes

Mix the orange cubes, strawberries, and raspberries into the remaining liquid

Pour over the set gelatin and refrigerate for approximately 2 hours
Unmold and serve with a sauce made by dissolving strawberry jelly in boiling water for 2 minutes
How to hydrate gelatin: 1
In a small bowl, combine 5 tablespoons of cold water and the gelatin, whisking constantly with a fork or spatula
Leave the gelatin to rest for a few seconds before proceeding

Place the bowl in a saucepan filled with hot water to dissolve the gelatin.
