1 bunch of broccoli
3 hard-boiled eggs
1/2 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon finely chopped onion
1/8 teaspoon optional thyme

Wash the broccoli, remove the leaves, trim the stems and cook the broccoli in boiling water with salt for 20 minutes
Drain
Meanwhile, hard-boil the eggs and let them cool
Separate the egg yolks from the whites and strain the yolks through a fine-mesh sieve
Mix the remaining ingredients in a small saucepan over low heat, whisking constantly until well combined
Pour this sauce over the broccoli and sprinkle with the strained egg yolks
Serve 4-6 servings.
