Add the pork shank pieces and cook until browned
Add the flour, salt, black pepper, and white wine
Let it simmer
Allow the wine to evaporate
Add the crispy bacon, parsley, and garlic
Stir well
Cook for 1 hour and 15 minutes over low heat or until the pork is tender and a rich broth forms
Add more water if needed
Serve in portions of 10
