1 tablespoon quince jelly - 20 g

1 carrot, peeled and cut into thin slices - 100 g
1 escarole, cut into wide strips

Cut the beef into strips 5 x 1 cm
In a large bowl, mix 1 tablespoon soy sauce, lemon juice, 1 tablespoon vegetable oil, white parts of green onion, garlic, quince jelly, and black pepper
Add the beef, stir, and let it rest for 15 minutes
In a large frying pan, heat 1 tablespoon vegetable oil
Add the carrot, stir, and fry for 1 minute
Add the escarole, green parts of green onion, and another tablespoon soy sauce
Fry and stir for 2 minutes
Remove from heat and place in a container
In the same frying pan, heat 1 tablespoon vegetable oil and add the beef, frying it for about 2 minutes or until it's opaque and firm
Add the escarole mixture
Stir, heat, and serve
Serve 4 portions
