6 large fish fillets

1/4 cup vinegar
1 cup fresh parsley

Season the fish fillets with salt and pepper and place them in a large skillet
Cover with remaining ingredients, cover and simmer over low heat for 25 minutes or until the fish is cooked through
Place the fish fillets in a refrigerated dish and top with the sauce
Refrigerate until serving time
For the sauce: Blend all ingredients in a blender
Check seasoning and use
Serves 4 to 6 people.
