Mix the olive oil with lemon juice, parsley, salt, and black pepper
Season the fish cutlets with this mixture and let them rest for 1 hour
Drain excess seasoning and coat each fillet in flour
In a large skillet, melt the butter, add the fish, and cook over medium heat, covered, flipping occasionally until cooked through and golden (takes almost 10 minutes)
Serve 6 portions
Note: Serve with mashed potato.
