In a saucepan, combine the Karo, sugar, and water
Place over low heat without stirring until the mixture forms a thread when pulled between your thumb and index finger
If it forms a string with little resistance, it's ready
Remove from heat, gradually add the peppermint extract while whisking constantly
Let cool
Serve the sauce chilled with vanilla, chocolate, or other ice cream of your preference
