10 cups of water
1/4 cup of vinegar
2 tablespoons of chopped shallot
2 tablespoons of coriander
1 tablespoon of turmeric
1/2 teaspoon of ground black pepper
500g of dried beef
500g of washed fava beans
3 diced tomatoes with skin and seeds
2 cloves of garlic, crushed
1 large onion, chopped
1 sweet Italian sausage, sliced
1 salted pork belly, cut into pieces
1 green bell pepper, diced
1 pinch of cumin
10 cups of water

Rinse the fava beans and soak them in water for at least three times

Also rinse the dried beef and pork belly separately to remove excess salt

Cut the beef into small pieces

In a large pot, combine the fava beans and eight cups of water
Bring to a boil over medium heat and then reduce the heat to low
Simmer for 40 minutes

Add the dried beef and continue cooking for another 20 minutes

Dilute the turmeric in the remaining water and set aside

Add the onion, garlic, tomato, bell pepper, vinegar, and other seasonings to the pot

When the mixture starts to simmer, add the sausage and pork belly and cook with the lid on over low heat for one hour or until the meats are tender

Add the remaining water to the pot and stir gently without breaking up the fava beans

Remove the meats from the pot and set them aside

Blend a little of the cooked fava in a blender with the cooking broth

Return the blended mixture to the pot, stir well, and let it simmer for five more minutes

Serve the stew hot, with the cooked meats on the side.
