1 tablespoon of unflavored gelatin
1/4 cup of cold water
1 avocado, mashed
1 tablespoon of lime juice
salt and black pepper to taste
1/4 teaspoon of orange zest
2 cups of sour cream
3 tablespoons of chopped fresh parsley
a few drops of hot sauce (optional)
some crackers or toasted bread, cut into rounds

Grease a 9-inch springform pan with oil
In a small saucepan, combine the water and gelatin
Let it sit for about 5 minutes to soften
Cook over medium heat, stirring constantly, until the gelatin dissolves
Beat in an electric mixer the avocado, lime juice, salt, black pepper, orange zest, sour cream, parsley, hot sauce (if using), and gelatin mixture
Add a few drops of green food coloring (optional)
Pour this mixture into the prepared pan, cover with plastic wrap or aluminum foil, and refrigerate until firm
If desired, let it sit in the refrigerator for 2 days, but do not freeze
Remove from the mold onto a serving plate
Garnish with suggested ingredients and serve with crackers or toasted bread
