10 cups of water
1/4 cup of vinegar
2 tablespoons of finely chopped chives
2 tablespoons of thyme
1 tablespoon of paprika
1/2 teaspoon of ground black pepper
500g of beef brisket
500g of cleaned fava beans
3 diced tomatoes with skin and seeds
2 cloves of garlic, minced
1 large onion, chopped
1 link of calabresa sausage, sliced
1 piece of pork ham, salting
1 green pepper, diced
1 pinch of cinnamon
10 cups of water
1/4 cup of vinegar

500g of beef brisket
500g of cleaned fava beans
3 diced tomatoes with skin and seeds
2 cloves of garlic, minced
1 large onion, chopped
1 link of calabresa sausage, sliced
1 piece of pork ham, salting
1 green pepper, diced
1 pinch of cinnamon
Soak the fava beans for at least three times
Also soak the beef brisket and pork ham separately to remove excess salt
Cut the beef into bite-sized pieces
Put the fava beans and eight cups of water in a large pot
Simmer for 40 minutes in medium heat
Add the soaked beef and cook for another 20 minutes
Add the onion, garlic, tomato, pepper, vinegar, and other seasonings to the pot
When it starts to boil, add the sausage and pork ham and simmer, covered, for an hour or until the meats become tender
Add the remaining water and avoid stirring to prevent fava beans from breaking apart
Remove the meats and reserve
Blend a little of the fava beans with the cooking broth in a blender
Return it to the pot, mix well, and simmer for five minutes
Serve the stew hot and the meats separately.
