1 piece of pork rind
1 green pepper, seeded and chopped
1 pinch of cinnamon
10 cups of water
1/4 cup of vinegar
2 tablespoons of chopped scallions
2 tablespoons of coriander
1 tablespoon of paprika
1/2 teaspoon of ground black pepper, milled
16 oz of dried beef
16 oz of fava beans, rinsed
3 cups of diced tomatoes with skin and seeds
2 cloves of garlic, minced
1 large onion, chopped
1/4 pound of linguiça, sliced
1 piece of pork rind
1 green pepper, seeded and chopped
1 pinch of cinnamon
1
Bring the fava beans to a boil for at least three times
2
Also, separately, cook the dried beef and pork rind until the salt is removed
3
Put the fava beans and eight cups of water into a large pot
4
Simmer in a medium oven for 40 minutes, then add the cooked beef and continue cooking for another 20 minutes
5
Dilute the paprika in the remaining liquid and set aside
6
Add the onion, garlic, tomato, green pepper, vinegar, and other seasonings to the pot
7
When it starts boiling, add the linguiça and pork rind, and cook over low heat with the lid on for an hour or until the meats are tender
8
Add the remaining liquid and avoid stirring to prevent the fava beans from breaking apart
9
Remove the meats and set aside
10
Blend some of the fava beans in a blender with the cooking broth
11
Return it to the pot, mix well, and simmer for five minutes
12
Serve the stew hot and the meats on the side.
