Leave the black beans to soak for a day
Cook, with plenty of water, the black beans, pork knuckles, and rosemary until the broth thickens
Fry apart some garlic and bacon, and when the mixture is golden, add a bit of black bean, stir well, and return it to the main pot
Mix in a bit of black bean to thicken the stew, season with salt and pepper, and serve.
