Place 12 cups of water in a large pot
When it starts to boil, add all the ingredients
Cook over low heat, uncovered, for about 2 hours
Remove the foam that forms during cooking with a skimmer
Let it cool
Tear out the meat
Strain the broth through a fine-mesh sieve
Cover and refrigerate for 2 hours
Remove the layer of fat that has formed on top
Serve hot
