Bring 12 cups of water to a boil in a large pot
When it starts to simmer, add all the ingredients, reduce heat and cook, with the pot partially covered, for 1 hour and 30 minutes, removing any foam that forms with a skimmer
Let it cool, remove the chicken pieces, onion, and celery
Strain the broth through a fine-mesh sieve
It's ready to be used in the recipe
If desired, place it in an airtight container and refrigerate or freeze for up to 8 cups
