Poke the potatoes with a fork and leave, covered, in the microwave (without water) for about 10 minutes
If you don't have a microwave, cook them in boiling water with skin
While the potatoes are cooking, caramelize the onion and garlic, preferably in olive oil, in a 4-liter pot
Stir occasionally
Chop the cabbage finely
Place it in a colander
Boil water and pour it over the cabbage, followed by an ice-cold shock with cold water
This will ensure the cabbage remains green
Place the meat in the boiling water to start heating up
While that's happening, squeeze the potatoes, including skin and all
Add this puree to the water, which should be coming to a boil, and stir well
Let it cook for about 15 minutes
Add the cabbage and wait another 5 minutes before turning off the heat completely and serving
Serve with toast, grated Parmesan cheese, and an excellent red or hot wine.
