1 kg of shrimp

1/4 cup of brandy
2 cups of heavy cream
6 well-beaten egg yolks
salt and pepper to taste

Deshell and clean the shrimp
Lavage and drain well
Melt the butter and fry the shrimp until it's coral-colored (this takes about 8 minutes)
Pour in the brandy over the shrimp and light it
In another pan, heat the heavy cream just to a simmer
Add a bit of this cream to the egg yolks
Mix well and pour into the pan with the remaining cream
Cook slowly, stirring constantly, until the sauce thickens
Season to taste with salt and pepper
Pour over the shrimp and serve immediately
