For the topping

Melt 1/2 cup white wine and 1/2 cup vermouth or cognac in a large saucepan
Add the shrimp and cook over high heat for 3 minutes after boiling
Drain and distribute the shrimp among 6 small ceramic baking dishes (ramequins)
Preheat the oven to 200°C (hot)
Melt 1/4 cup butter in a medium saucepan over medium heat, then add the onion and cook until softened (around 3 minutes)
Add the flour and stir well
Gradually add the milk while stirring constantly, cooking until the mixture becomes homogeneous and thickens slightly (around 10 minutes)
Add the cheese and continue stirring until melted
Add the salt, pepper, and nutmeg seed
Distribute this mixture among the baking dishes with the shrimp
To prepare the topping: combine the crushed cream crackers with the melted butter in a medium bowl
Top each baking dish with the creme brûlée
Sprinkle with cayenne pepper
Place the baking dishes in an oven-safe dish and bake for around 25 minutes
Remove from the oven, garnish with chopped parsley, and serve
