Wash the shrimp, peel and clean them
In a pot, place 2 cups of water, the onion, parsley, salt, and thyme, along with the curry powder
Bring to a boil in covered pot over medium heat
Cook for 10 minutes
Add the shrimp, bring to a boil again, reduce heat, and simmer in covered pot for 3-5 minutes
Drain, let cool, and refrigerate until ready to prepare the salad
