In a medium skillet, melt the butter, onion juice, and garlic over medium heat
Cook, stirring occasionally, until a caramel forms
Add the shrimp, orange peel, salt, mustard, and flour
Mix well and cook for 2 minutes
Add the orange-pineapple juice, stirring constantly
Let it cook until slightly thickened
Serve immediately, dusting with chopped scallions
