Cashew Syrup

  • 1

Wash the cashews well, remove the pits, and cut into small pieces (using a stainless steel knife). Combine 1 tablespoon of lime juice with each cup of chopped fruit. Blend in a blender and store in the refrigerator. Make a syrup, measuring out the same amount of sugar as you measured out fruit, and double the water. If you used 1 cup of chopped fruit, 1 cup of sugar, and 2 cups of water. Boil the water with the sugar, let it cool, and add the cashew mixture mixed with lime juice. Strain through a fine-mesh sieve. Store in the refrigerator and serve with cold water.
