Now, prepare the shrimp: peel them, leaving the tail intact
Clean them well, wash and dry
Place in a bowl and add baking soda and salt
Let it sit for about 30 minutes or more to make the shrimp tender
Then, rinse them to remove any remaining baking soda
Drain well and set aside
Prepare the sauce: combine olive oil, ketchup, and tomato extract in a pan, cooking for 1 minute, stirring constantly
Add 1 cup of water, vinegar, soy sauce, salt, and Parmesan cheese
Mix cornstarch with 3 tablespoons of water and add to the simmering sauce
Let it cook until slightly thickened, stirring constantly
Set aside
Now, make the shrimp batter: combine flour in a bowl and gradually add 1 cup of water, mixing well
If the dough becomes sticky, pass it through a strainer
Add salt and yeast
Heat vegetable oil in a pan to fry the shrimp
Coat each shrimp with the batter and then gently place them into the hot oil
Fry until golden brown
Drain on paper towels
When serving, drizzle the red sauce over the shrimp and enjoy!
