Rinse the chicken with cold water and season it with salt and black pepper
Marinate it in the white wine for 1 hour
Transfer it to a baking dish and reserve
Slice the sweet herbs into thick slabs and place them on top of the chicken and at the bottom of the baking dish
Cover with aluminum foil and bake in a medium-temperature oven for 1 hour
Remove the foil, let it brown, and serve when the meat is tender
Baste with the juices that form at the bottom of the baking dish during cooking.
