1/2 kg of medium-sized shrimp (26 to 30 shrimp)
1/2 kg of fresh peas, or canned peas
2 tablespoons of cornstarch
1 egg white
2 tablespoons of vinegar or dry sherry wine
1 teaspoon of salt
3 soup spoons of olive oil
1 bunch of green scallions cut into 2.5 cm pieces (including the green part)
2 slices of fresh ginger, each 1/2 cm thick and 2.5 cm in diameter

3 soup spoons of olive oil

Remove the shells from the shrimp and remove the dark vein, making a smooth incision on the backs of them
Wash the shrimp under running water and pat them dry with paper towels
Cut the shrimp in half lengthwise and then cut each half into two pieces, crosswise
Blanch the peas for 5 to 7 minutes until they are slightly tender
Drain them and rinse under cold running water
This will make them firm and retain their bright color
Canned peas should be used without blanching
In a large bowl, coat the shrimp well with cornstarch so that all of them are lightly dusted
Add the egg white, wine, and salt and mix until everything is well combined
Let this mixture rest for 1 hour or more
Heat the 3 soup spoons of olive oil in a large frying pan over medium heat, spreading it evenly without letting it smoke
Add the scallions and ginger and fry for about 30 seconds, stirring constantly to give flavor to the oil
Remove the scallions and ginger with a slotted spoon and discard them
Immediately add the shrimp to the frying pan and fry, stirring constantly, for about 2 minutes until they are pinkish
Do not overcook the shrimp
Add the peas and fry without stopping, stirring constantly, until they are hot
Transfer everything to a warmed serving dish and serve immediately
As a main course, this recipe serves 2 to 4 people
As an accompaniment, it can serve up to 6 people
