1 kg of medium shrimp
"1/2 cup of chopped green onion"
salt and black pepper to taste
2 tablespoons of chopped cilantro
2 medium onions, sliced into rings
7-8 sprigs of rosemary
"1/4 cup of olive oil"
"3/4 cup of vinegar"
2 1/2 tablespoons of capers
some pimentos for garnish
juice of 1 lime

Cover the shrimp with boiling water
Combine salt, pepper, and green onion
Let it simmer for 10 minutes
Drain
Peel and clean the shrimp
In a glass jar, layer alternating layers of shrimp, onions, and rosemary
Then, mix in remaining ingredients and spoon over the top layer of shrimp
Next, cover and refrigerate for at least one day before serving
Remove from container with a skimmer and serve on skewers or toothpicks
Serves 4-6 portions.
