1 fresh pineapple

100g unsalted butter or margarine
1/2 cup chopped parsley
1 tablespoon chopped green onion

Cut the pineapple into slices
Remove the tough core from the center
Cut the slices into small triangles
Spread a thin layer of mayonnaise over the pineapple
Top each triangle with 2 or 3 cooked shrimp
Shape a paste with butter, parsley, and green onion
Place in a pastry bag and pipe onto each canapé
