Half of 1 large chicken
3 cloves of garlic, minced
4 tablespoons of olive oil
1 carrot, cut into cubes
1 potato, cut into cubes
1 tomato, peeled and seeded, chopped
1 onion, chopped
2 1/2 liters of water
1 cup of rice
2 tablespoons of chopped fresh parsley
Salt to taste

Season the chicken with 1 clove of garlic mixed with salt
Set aside
In a large pot with olive oil, add the remaining garlic and sauté until it starts to brown
Add the chicken and let it brown, stirring with a wooden spoon
Add the carrot, potato, tomato, onion, and 1 liter of water
Cover the pot and bring to a boil at high heat
Reduce the heat and add the rice
Add the remaining water
Cook until the rice is tender
Add parsley, cover the pot, and remove from heat
If desired, shred the meat
Serve hot.
