Place the guava in a saucepan, add the water and bring to low heat, stirring until it dissolves and reaches a thick consistency
Add the lime zest and rum
Stir and remove from heat
Let it cool completely
When it's cold, add the cheese cubes and mix gently
Fill the fritters with the mixture and decorate with a mint leaf
Serve two fritters per plate
If desired, serve with whipped cream or ice cream.
