Dough: combine all ingredients to form a smooth dough
Cover with plastic wrap and let it rise for an hour
Filling: combine all ingredients and set aside
Divide the dough into four parts, roll out each one on a floured surface to a rectangular shape
Spread the filling over each rectangle and roll them up like a roulade
Cut each roulade into thick and equal slices and arrange them side by side in a round mold
Baste the entire surface with egg yolk and let it rest for 15 minutes
Bake in a medium preheated oven for an hour
In a bowl, combine all ingredients of the sauce and spread over the warm puff pastry
