Mix the sugar, 1 cup of cream, the corn syrup, and salt in a large saucepan
Cook for 10 minutes, stirring constantly
Gradually add the remaining cream while whisking, so the mixture doesn't stop boiling
Let it boil for an additional 5 minutes
Add the butter (1 tablespoon at a time), whisking constantly
Cook slowly, whisking, until a small portion of the mixture forms a ball with a consistency similar to caramel when dropped into cold water
Remove from heat
Add the vanilla and nuts
Whisk slowly
Pour into an 8x5-inch pan greased with butter, and let it cool
Invert onto a surface and cut into 2-cm cubes
Wrap in wax paper
This recipe yields about 1 kg.
